Master Chocolatier José Ramón Castillo shares his delicious recipes on 3 Minutos Chocolate.

3 Minutos Chocolate is a new program dedicated to this most delicious treat. Host Chef José Ramón Castillo plans to share recipes and his love of everything chocolate. “The challenge will be to achieve versatility with chocolate, inviting the viewer to venture with this ingredient, and use it in all its forms, not only in desserts and pastries but also in savory dishes and drinks,” explains Castillo. José Ramón has been recognized as a “Maximum Exponent of Mexican Cocoa and Master Chocolatier” by the Mexican Ministry of Agriculture, Livestock, Rural Development, Fisheries and Food—SAGARPA—and works to preserve his country’s tradition of cocoa.
“I partner with the government to improve cocoa plantations and increase the production of high-quality chocolate in Mexico.”

You can experience Castillo’s expertise first-hand at Que Bo!, a shop he opened in Mexico 8 years ago. There, one hundred percent of the products he uses are Mexican. “It’s a concept called ‘evolutionary Mexican chocolate’ where we have a policy of only buying products directly from the producer,” explains José Ramón.

At a young age, José Ramón knew that food was his passion. “I’ve always been a glutton. I love to eat and eat well,” he says with a chuckle. To follow his dream, Castillo had to go against the customs of his hometown. “My family is from Chiapas where cooking is very big culturally. Women cook very well and men are not allowed in the kitchen.” Nevertheless, he would still make his way into the kitchen on Sunday mornings and scramble eggs for breakfast. When he was 14, his mom encouraged him to step out of the family kitchen and pursue his love of cooking in earnest. “My parents always supported me and so I began to study.”

Today his success includes being the first Mexican chef to have his chocolate selected as one of the best in the world and being included in the most prestigious international chocolate guide, France’s Club des Croqueurs de Chocolat. “There are so many things that I am thankful for. I am living my dream,” concludes Castillo.
